We have reached the last day of this week. So the last recipe with kovakkai for this mega marathon is a simple kovakkai masala which I often make as a side dish for chapathi.
I am happy that I am successfully ale to complete the second week of this marathon. I feared I won't be able to. There is still commenting pending but Valli always gives some extra time for commenting and hopefully I will complete it by then. So over to the simple recipe now.
Ingredients:
Kovakkai / Tindora - 300 grams
Onions - 2 nos
Tomato - 2 nos
Oil - 2 tsp
Turmeric powder - 1 tsp
coriander powder - 1 tbsp
garam masala powder - 1 tbsp
Chilly powder - 1.5 tsp
Curry leaves - few
Salt - to taste
Method:
- Slit the kovakkai lengthwise and keep it aside.
- In a pan or kadai, add oil. Add chopped onions and curry leaves. Fry until the onions turn translucent.
- Add the chopped tomatoes and chopped kovakkai. Fry for 2-3 minutes.
- Add salt and turmeric powder and 1/2 cup of water.
- Cover and cook until the kovakkai is cooked.
- Add the remaining powders. Mix well. Cook for another 2 minutes.
- Let there be little water in the dish instead of drying it out completely.
Kovakkai masala is ready!! Serve with hot Rotis or chapathis.
